One of the most famous however comes not from the taco motherland but from Lebanon. Tacos al Pastor are amongst the favorite dishes of Mexicans and Americans who adore food from South of the Border. They are also a main feature of Mexican restaurants in Texas such as Guero&#8217;s Taco Bar.
<p>History<br />It is believed that Lebanese immigrants are responsible for the creation of Tacos al Pastor. They brought over their shawarma method of spit-roasting lamb from their native land in the 1930s which was in turn used as an inspiration for experts in Mexican cuisine who changed the lamb used by the Lebanese to pork for their purposes. Puebla in Mexico could be seen as the birthplace of Tacos al Pastor as this is where the Lebanese brought their cooking method first.
<p>Creation<br />Another name for Tacos al Pastor is &#8216;tacos de trompo&#8217; which are created by marinating pork within a condiment made of spices, achiote and pepper. An iron rod is then used to skewer this delicious concoction. The rod is turned around a wall of fire to ensure that the outside is the first to roast. Once the meat is properly cooked, it is sliced away with the inner meat revealed and cooked. The roasted meat is put inside a tortilla with additional ingredients such as pineapple, chopped onion and salsa added.

			<content:encoded><![CDATA[<p>If there is one chef who embodies the words &#8220;Genuine American Chef&#8221; that would be Jonathan Benno. Inarguably, there are many chefs that can probably meet the description, but Benno has certainly proven himself worth to be recognized as such. After all, he is the head chef of the Per Se, one of the two American restaurants that made it to the top 10 of El Pellegrino World&#8217;s 50 Best Restaurants list.
<p>Per Se ranked seven and it was also recognized as the Best Restaurant in the Americas. Although this is one of Thomas Keller&#8217;s restaurants, the man behind the stove is Keller&#8217;s protégé, Jonathan Benno.
<p>Jonathan Benno is one of the most innovative and inventive chefs today. He has practically perfected the fusion of different kinds of cuisines including French and Mediterranean. He also plays a lot with classical cooking styles and creates delectable dishes. He is fairly dramatic when it comes to food presentation, but he likes to use local ingredients. His skills and talents have certainly grown over the years. It&#8217;s just as well as one would expect from someone who discovered his love for cooking at the age of 16. It took him some time though to develop his skill. After all, it took him a while before he could create practically perfect dishes like his butter-poached Nova Scotia lobster.
<p>He started out as a dishwasher at The Oxford House. Wanting free access to beers, he thought that hanging out with grownups in restaurant kitchens will do just the trick. He was, as he calls it, a &#8220;punk&#8221;. He eventually discovered that he like hanging out in kitchens and watching chefs prepare dishes. He spent his time learning about various kitchen jobs &#8211; butchering meat, receiving inventories, baking pastries and cooking dishes. It was during his time at The Oxford House that he discovered his love for cooking. This prompted him to pursue a career in culinary arts, and he enrolled himself in a culinary school.
<p>After finishing his course, he worked at various restaurants until he finally landed a job at The French Laundry. This is where he met Thomas Keller who taught him the value of excellence. After several years at The French Laundry, he took off on his own and worked in several other restaurants all over the world. Eventually, he found his way back into the kitchens of The French Laundry. When Keller opened Per Se, it was inevitable that Chef Jonathan Benno would end up as the restaurant&#8217;s chef de cuisine.
<p>It is in Per Se that you will find Chef Benno. It is where you will also experience his delicious culinary creations.</p>

<p>Visiting Clearwater Beach and don&#8217;t know where to eat? The area boasts tons of great restaurants; all catering to a variety of tastes and price ranges. Here are just a few of my favorites for just about every occasion.
<p>Maggie Mae&#8217;s Sunrise Cafe<br />Regarded as one of the best breakfast spots on Clearwater Beach, Maggie&#8217;s also specializes in serving a meal all its own &#8220;Blunch,&#8221; which Maggie refers to as &#8220;the meal for those who have too much of a hangover to get out of bed in time for breakfast.&#8221; The atmosphere is casual and playful, and the eats are comfort food delicious. My personal favorite is the Florida Pecan Waffle, topped with Maggie&#8217;s own special blend<br />Grand Marnier &#038; Malibu Rum Syrup. &#8220;Hillbilly Taters&#8221; are excellent too!
<p>Island Way Grill<br />While Maggie Mae&#8217;s is on the casual side, Island Way Grill is upscale, and the perfect fine dining dinner spot. But folks looking to vacation on a budget shouldn&#8217;t shy away from one of Clearwater Beach&#8217;s best upscale restaurants &#8211; they offer Early Bird Specials with a soup/salad, entrée, and dessert for only $10! Personally, I&#8217;m a big fan of their sushi bar, but unlike other sushi restaurants, those I dined with could enjoy something else from the menu without any problems. Best place to get local, fresh-caught fish.
<p>Frenchy&#8217;s Café<br />This is the place to go to for lunch and a nice big, fat, juicy grouper sandwich. I recommend having it served Cajun style. Frenchy&#8217;s has been a fixture on Clearwater Beach for ages, and it&#8217;s a great place to cool off after soaking up the sun all day. Plus there&#8217;s always something special about having homemade, crispy chips with my burger. So delicious and the service is great! A short distance from several of the <a target="_new" rel="nofollow" href="http://www.theclearwaterbeachhotel.com">Clearwater Beach Hotels</a>.
<p>Cesare&#8217;s on the Beach<br />Regarded as the go-to place for Italian food, Cesare offers some of the best Italian food you may have ever tasted. In fact, the owner, Cesare Tini once served Frank Sinatra. In Sinatra&#8217;s honor, Tini created the &#8220;Sinatra&#8221; which has become one of the restaurants most popular items &#8211; veal scallopine rolled around scallops and shrimp in a light lemon sauce. Personally, I recommend both the Eggplant Rollatini and Spaghetti Carbonara, featured homemade pasta. Finish the meal off with a nice slice of Tiramisu. And make sure to say hello to Mr. Tini at the door &#8211; he always stands at the door to greet his customers, an extra special touch that keeps patrons coming back for seconds, thirds, and even fourths on their vacations. By the way, I do so with complete peace of mind as I never, I&#8217;ll repeat that word, never accept a commission, which gives me the freedom to write about anything I find interesting and that I think you might enjoy.
<p>Ristorante da Gino is such a place, located next to an idle piece of water called Lake Chiusi, an ancient puddle that is most likely the spill over from Lake Trasimeno. Would you believe this place was once a water pumping station for the Italian State Railways for the old steam engines that shunted in the nearby Chiusi Railway Station and the property, run by the sister and brother team of Manuela and Claudio Giulietti, is still rented from the railways. Their mother started cooking the local lake fish here many years ago and taught the daughter her secrets of cooking dishes that have with the passage of time mostly been forgotten about.
<p>Dishes like Brustico, with its origins that go back to the local Etruscan people. A very hot fire with high flames made from the reeds that grow along the water&#8217;s edge of the lake upon which a collection of small lake fish that includes pike, perch and black bass are barbecued over those flames for approximately 30 minutes. The &#8216;charred&#8217; fish are then removed and the burnt scales are scrapped off with a knife, then filleted and placed on a plate and served to you warm, never hot, drizzled with a delicious local virgin olive oil, pepper, salt, squeezed lemon and fresh parsley. Simple, but absolutely delicious.
<p>The &#8216;real&#8217; home made pici, the typical pasta you find south of Siena and looks like a fat spaghetti, is served here with a mixed fish sauce and carp eggs which I can tell you is special and adored by the locals in there parts. If that doesn&#8217;t tickle your fancy then ask for the pici with their duck sauce and watch yourself smile!
<p>If dining in this ancient country means dining on ancient dishes and for me that is a real part of the magic of visiting Italy then you might try their Tegamaccio, because nobody else that I know is making it in this traditional way anymore. This is the local fish stew that is slowly cooked over a few hours in a terracotta pot and includes several types of local fresh water fish and eel in a stupendous and rich tomato sauce. It&#8217;s about at this moment during the meal, helped of course by several glasses of the very good local red wine, that you start feeling like a King! Yes, red wine, which in this quiet corner of southern Tuscany, is light and fruity and is a perfect companion to these simple, traditional dishes.
<p>As I walked away from my table and wandered out by the waters edge, having eaten my way through all of the above, I thought of George Miller&#8217;s comment, &#8220;The trouble with eating Italian food is that five or six days later you&#8217;re hungry again!&#8221; and promised myself that next time around I wouldn&#8217;t order the Brustico, or perhaps I could leave out the pici; I could not forgo the Tegamaccio though; but I really do like the Brustico. That&#8217;s it, I&#8217;ll leave out the salad &#8211; enjoy.
