Chef Masaharu Morimoto – The Brilliant Japanese Chef in New Delhi

The one thing that differentiates this year’s El Pellegrino World’s 100 Best Restaurant’s list from the previous lists is the inclusion of many Asian restaurants. Many people are probably pleased about the inclusion of Wasabi in this year’s list. This Japanese restaurant is actually located at the Taj Mahal Hotel in New Delhi, India. This is the owned by Chef Masaharu Morimoto who also works as the restaurant’s head chef. This world-class restaurant is actually the first Japanese restaurant in the area. It is also the 70th best restaurant in the world according to this year’s list.

If you knew Chef Morimoto in his youth, you wouldn’t think or even imagine that he would one day become the world-class chef that he is now. As a young man, he was not pursuing a career in culinary arts. He was actually playing professional baseball – that is, until he injured his shoulder and had to say goodbye to baseball. It was at this point that he was forced to consider other options, and that was when he decided to become a sushi chef. He studied the art of cooking sushi for eight long but successful years. It was during this time that he perfected his techniques in cooking this favorite Japanese dish. He also learned the Kaiseki cuisine.

At the age of 25, he decided to open his own restaurant. Knowing that there are millions of Japanese restaurants all over the world, he knew that he needed to distinguish his own restaurant from the rest. He decided to infuse European cooking techniques in his cooking. Eventually, he sold this restaurant and then relocated to the Untied States. Bent on learning more about culinary arts, he worked in various dining establishments including Nobu. After several years in the United States, he moved to Japan where he became popular because of the TV show, Iron Chef. Thereafter, he moved to India where he opened his world-famous restaurant, Wasabi.

Now, Chef Masaharu Morimoto spends his days cooking delectable dishes for his guests. He has brought Japanese cooking to newer heights. He also exhibits a knack for innovative cooking. He has this innate ability to discover the various facets of Japanese cooking and he embellishes them, embraces them and recreates them for himself. Often he ends up with new dishes that are bound to amaze and please. And that’s what he does everyday – he pleases his guests. It is not surprising that his restaurant is one of the best dining establishments in the world today.

Miguel’s Coronado Restaurant Review

I spent last night at my wife and I’d favorite Mexican restaurant, Miguel’s which has two locations in the San Diego area: Point Loma and Coronado.

We chose Coronado-the Crown City. A couple of reasons for going there even though it’s about a 45 minute drive for us now; To start we lived there for about a year before a job change necessitated a move and secondly it is one of the most beautiful areas in southern California. Coronado is an “island” (actually it does connect to Imperial Beach by the Silver Strand which is a very thin strip of land, made somewhat famous by it being the home of Navy Seal training) with about 20,000 residents just about a mile off downtown San Diego. It’s basically split into two parts, one part residential with a great main street style set up and the other North Island-a large Navy base where two carriers and about 20k seamen are based at any one time. Coronado’s best known feature is the Hotel Del Coronado, but my wife and I love spending time out there because it gives a truly small town feel which is getting extremely hard to find in and around San Diego. It also is one of the places where the local community and military really do live hand in hand which is always great to see, especially with so many service men spending so much time away from their families.

Ok so what is Miguel’s? It started in the early 80′s from a pretty famous restaurateur family in San Diego, but last night was kind of nice in that my wife, my mother in law and myself were seated back in a new addition to the Coronado location which has for sale artwork and is a sort of boutique store in and around the tables which makes for a pleasing visual experience.

So generally speaking the food is excellent, I can definitely suggest the carne asada plate which is more of a traditional marinated steak then some of you may be used to. How often do you order something at a Mexican restaurant to be asked how you want it cooked?

Overall we had a great time, one small snafu on the drink front was that the bartender was new and did not know how to make my wife’s margarita which was a combo of pineapple juice and cranberry (I believe) anyway after waiting for it for a while… well it actually came after the food… it sort of resembled jungle juice that a lot of us used to make in college. On the good side, they removed it from the bill and the other two margaritas were both quite good.

Again, you can’t drink wine all the time and we had a nice evening out in a beautiful area. I’ll be going into some more wine depth over the next couple of days but Matt and I have been invited to work a day of harvest which we are both very much looking forward to, it should be quite the experience!

Ever tried hot and spicy Nilgiri Mutton?

Delhi might not be totally incorrect in claiming to be the food capital of the country but there is no denying that the capital lacks a really good high-end south Indian eatery. Agreed that Swagath pops to mind when one thinks of fine dining south Indian but barring a few signature dishes Swagath does leave a little more to be desired. And while the subject is fine dining let’s not mention Sagar Ratna as an option.

So where does that leave Delhi? Don’t give up just yet for Zambar, a high-end south Indian joint with a twist, might just solve the problem. Nestled right next to Haldiram’s in Gurgaon’s Ambience Mall, Zambar from the outside might look like a kitschy wannabe thanks to its zany name and cactus like logo but it’s a different tale when you step in.

Zambar’s sitting area resembles a houseboat in the Kerala backwaters and the lighting is so designed as well. The near somber mood created by the lighting is accentuated with water flowing over a glass ceiling above the sitting area.

The sound of flowing water adds to the overall mood and before you know the stomach juices have already started flowing. The menu features a small little introduction that boldly claims Zambar to be a place that looks beyond the usual suspects when it comes to south Indian food and for starters it doesn’t fail.

The Zambar Thali is perhaps the best option to sample a little of everything good at Zambar. While there is only one vegetarian thali there are two non-vegetarian options to choose from.

Accompanied by a Malabar Parotha, the Non-Veg Thali features three vegetarian and two non-vegetarian dishes as well as curd and a dessert. The corn curry is a little high on tomatoes and the cabbage subzi is little bland but the thali is saved by the chicken korma that is exceptional.

Generous helpings and the economical pricing (Rs. 425 plus taxes) make the thali score a near 10 on 10.

While the Thali surpassed all expectations one couldn’t help but order a portion of some thing called Nilgiri Mutton. A nice thick green gravy based mutton dish, Nilgiri Mutton not only had an unusual name but a strong mint flavor made it extraordinary.

An Egg Appam (Rs. 65) is highly recommended along with the Nilgiri Mutton. Don’t miss the Non-Vegetarian Sampler (Rs. 425) that has five types of starters including the lip-smacking Andhra favorite Chicken 65.

Understanding that people might still crave the ever popular Dosa, Zambar does offer the ubiquitous south Indian goodie but gives it a metro make-over with chicken filling. If you want to spread your food journey a little more southwards then do try out the Ceylon Parotha; a flaky Parotha that comes in egg, chicken and prawn flavours.

Zambar bustles with people on the weekends and getting a table would mean a 15 minutes waiting but trust us when we say it’s surely worth the effort.

Yes, the restaurant is currently perched between teething troubles and first steps which is very visible from inordinately long delay in getting water or the complimentary buttermilk or even the missing cutlery on to the table but it’s the quality of food that makes everything else look inconsequential.

Zambar is nothing short of a refreshingly new experience when it comes to south Indian food.

For upwards of about £95 per person, you can order a foie gras with a crispy pancake of duck with cinnamon, or roasted pineapple with vanilla and rum, over white pepper ice cream for dessert.

Further down the road, of the Mayfair area, you’ll find Phillip Howard and Robert Weston’s The Square. Also being previously rated one of the best in London by several notable critics, you can find yourself spending also between £100 and £160 on each person dining. While there, you may order the terrine of foie gras with rhubarb and orange, and a brillat-savarin eheesecake for dessert.
